Salmon and tuna arrive on ice — never portioned at the supplier, never warehoused. Greens come from Union Square. The rice is the same brand we've used since 2016. If something is out of season, it is off the menu.

From the moment you order to the bowl in your hand.
Rice scooped warm. Fish sliced onto it. Sauces spooned last so nothing sits and goes soft. If you are a regular, we have already started yours.
